Chocolate Orange Cupcakes

I had a quite a few spare oranges so I decided to make some Chocolate Orange Cupcakes. I make a simple chocolate cupcakes recipe and added in the zest and juice of one orange. I then topped these with a chocolate orange buttercream.

Cupcakes

  • 125g Butter
  • 120g Caster sugar
  • 2 Large eggs
  • 175g Self Rising flour
  • 50g Cooco powder
  • 1 orange, zested and juiced

1) Pre-heat the oven to 180c and add your cupcake cases to a 12 hole muffin tin.

2) First cream the Butter and Sugar together and then add in one teaspoon of the flour.

3) Next add one egg and mix throughly.

4) Next add a couple more spoonfuls of the flour and mix. Now add the other egg and mix it all together.

4) Add in all the cocoa powder and the remaining flour and mix it all together.

5) Next add in the Orange zest and juice, a little bit at a time so the mixture doesn’t separate. Now just make sure its all mixed together and then fill the cupcake case about two thrids full.

6) Bake at 180c for around 8-10 minutes. Check they are done by inserting a skewer, if it comes out clean they are done.

7) Allow to cool before icing.

Icing

  • 75g Butter
  • 200g icing sugar
  • 50g Dark chocolate
  • 1 orange, zested and juiced

1) Mix half the icing sugar with the butter and then continue to add in the icing sugar until you have quite a firm buttercream.

2) Melt the dark chocolate over a pan of water and allow to cool slightly. Next stir the chocolate into the buttercream, making sure its all mixed in.

3) Next add in the zest and half the juice of the orange. Mix well, you may need to add more icing suagr at this point to bring it back to a firm buttercream.

4) Taste the buttercream and add more icing sugar or orange depending on how orangey you want it.

5) Next add into a piping bag and pipe onto each cupcake. I lost my star nozzle hence the piping 😦
